Mum’s Sweet Curry

Do you have vegetables or fruit that are starting to go off? Do you have left over roast dinner? This is the best recipe for using those things up!!!!

This recipe can also be made from fresh ingredients, but my Mum usually makes it when she wants to use things up. Sometimes you can also pick up really cheap bargains at the green grocer with vegetables and fruit that are on their way out. Cut out the bad bits of fruit and vegetables and use the “good” bits in this recipe. We do not waste food in our family and this recipe is really yummy!!!!

Ingredients

Meat – could be left over roast beef, lamb, pork (cut into 1cm cubes)
a couple of bananas
a couple of apples and/or pears
vegetables – beans, etc.
1x360g jar of Fountain Sweet Fruit Chutney
1 teaspoon Keen’s Traditional Curry Powder (or more if you wish)

Method

1. Put all the meat and vegetables with a little water in a large pot, cover and bring to boil. You do not need much water because the vegetables and fruit will produce enough water.

2. Turn heat to low and simmer until everything is cooked.

3. Add the Fountain Sweet Fruit Chutney and cook further.

4. Just before serving add one teaspoon of Keen’s Curry Powder and stir through.

5. Serve over stir-froiled vegetables and stir through.
