Mum’s Bolognaise

I love this recipe!!! It is really tasty and the meat can be put over spaghetti squash or plain vegetables and stirred through.

Ingredients

* 1kg lean mined beef
* 800g tinned tomatoes (or fresh)
* 1x500g jar tomato paste (not sure what Americans call it because I know that what we call Tomato Sauce, Americans call Ketchup….so there may be a difference here as well) we use Leggos and Mum uses at least 3/4 of it – depends how tomatoey she wants it
* garlic crushed
* Green or Red Capsicum chopped
* Mushrooms chopped
(if Dad is not eating it she also uses a chopped brown onion)

Method

1. Brown the mince (if you want to use an onion you add it here as well) in a large frying pan.

2. Add the tomatoes, capsicum, mushrooms, tomato paste, garlic, cover and simmer until everything is soft and cooked. Mum usually leaves it on low heat simmering for 1/2-1 hour.

3. Serve over spaghetti squash or vegetables.

* To prepare spaghetti squash there are many methods on the internet. You can either pierce 10 times with a knife all over the squash, or cut in half lengthwise, scoop out seeds and and microwave for about 10-12 minutes, pressure cook for about 10 minutes, boil for about 40 minutes. Either way, remove the seeds and then scoop out the flesh with a fork once cooked and it will fall away from the skin in strands just like spaghetti!
