Soni’s Stir Froil

Ingredients

Any combination of vegetables grown above the ground. Examples include:

Bok Choy
Choy Sum
Celery
Red/Green capsium
Yellow Squash
Zucchini
Mushrooms
Asparagus
Snow Peas
Choko
Broccoli
Cauliflower
Green Beans
Spinach
Silverbeet etc.

Wok
1 cup (250ml) water

Method

1. Chop vegetables.

2. Add harder vegetables (like choko) at the bottom of the wok and layer lighter vegetables (like leaves and mushrooms) at the top of the wok. Add about 200-250mL water.

3. Steam for 5 minutes or until tender.

4. Drain off water into glass.

5. Add seasoning to vegetables – like garlic, ginger etc. Stir through vegetables. Using a slotted spoon, place vegetables on plate. Any left over water at the bottom of the wok, pour off into the glass.

6. This water can accompany your dinner as it contains many vitamins and minerals from the vegetables.

7. Add any sauce you desire to your vegetables.
