Snow peas with ginger & chilli

Ingredients

45g (1/4 cup) raw cashews
2 tsp peanut oil or spray olive oil
3cm-piece fresh ginger, peeled, thinly sliced
1 garlic clove, thinly sliced
1/2 long fresh red chilli, thinly sliced
400g snow peas, trimmed, thinly sliced lengthways
1 1/2 tbs soy sauce

Method

Step 1
Heat a wok or large deep frying pan over medium heat. Stir-fry cashews for 2 minutes or until golden. Transfer to a plate.
Step 2
Add the oil to the wok and heat over medium-high heat. Stir-fry the ginger, garlic and chilli for 30 seconds or until aromatic. Add the snow peas and stir-fry for 1-2 minutes. Add the soy sauce. Stir-fry for 1-2 minutes or until the snow peas are just tender. Add the cashews and toss to combine.
