Pumpkin and spinach stir-fry

Ingredients

Spray olive oil
1 x 100g pkt macadamia nuts
1 bunch shallots, sliced
1 1/2 tbs finely grated fresh ginger
1 garlic clove, crushed
1kg Kent pumpkin, peeled, deseeded, cut into 2cm pieces
1 x 100g pkt baby spinach leaves
2 tbs soy sauce
2 tbs oyster sauce
2 tbs honey

Method

Step 1
Spray oil in a wok over medium heat. Add the macadamia nuts and stir-fry for 3 minutes or until golden. Transfer to a heatproof bowl.
Step 2
Add the shallots, ginger and garlic to the wok and stir-fry for 1 minute. Transfer to the bowl.
Step 3
Spray oil in the wok over high heat. Add the pumpkin and stir-fry for 7 minutes or until just tender. Add the shallot mixture, spinach, soy sauce, oyster sauce and honey, and stir-fry for 1-2 minutes or until the spinach wilts.
