Aunty Jan’s Zucchini Bake

Ingredients

6 small zucchinis (or 3 very large zucchinis) sliced
1 1/2 red capsicum chopped
mushrooms (~6 large) sliced
Lentils (either fresh cooked or canned and washed ~440g)
8 eggs
1/2 cup self raising flour
1/2 cup cheese
pepper and salt

Aunty Jan also uses chopped leeks but my Dad and I cannot eat them.

Greased pyrex dish (22cm x 33cm)

Method

1. Layer zucchini at the bottom, mushrooms, capsicum, (leeks) and lentis twice in the pyrex dish.

2. Beat eggs, flour, pepper and salt and pour over vegetables.

3. Top with cheese

4. Bake at 120C (~250F) in a fan forced oven until cooked (~50 minutes).

5. Can be eaten hot with vegetables or cold with salad.

We’ve had this twice now and the whole family loves it….even Dad who does not like zucchini. The first time we did not have the red capsicum. If we do any variations and they are good I’ll add them later.
